Sushi Salad
All the delicious flavor of sushi in a fresh bowl of salad! 263 calories per serving.
Ingredients
- 1 cup uncooked sushi rice
- 5 tablespoons rice vinegar divided
- 1 cup cooked soy beans I use beige beans. You could use black, green, or fresh tofu
- ½ small head of iceberg lettuce roughly chopped
- ¼ cup chopped fresh chives
- 2 tablespoons sesame seeds
- 1 sheet nori cut into small strips
- ¼ cup vegan mayo such as Vegenaise, Just For All, etc.
- 1 teaspoon sriracha
- 1 teaspoon wasabi paste
- Soy sauce to taste
Instructions
- Cook the rice according to package directions. You should end up with 3 cups cooked. Stir in 4 tablespoons (¼ cup) rice vinegar and a pinch of salt. Set aside to cool.
- Once the rice is cool, stir in the soy beans, lettuce, chives, sesame seeds, and nori. Whisk together the remaining 1 tablespoon vinegar, mayo, sriracha, and wasabi in a small bowl. Stir the dressing into the salad. Serve with a drizzle of soy sauce on top.
