Pasta with Roasted Cabbage and Onion

Fresh basil and lemon, and roasted cabbage and onions. This pasta dish is quick and easy, and is great for lunch or a weeknight dinner. 374 calories per serving.

Ingredients
  

  • 8 oz whole wheat penne
  • 3 cups sliced savoy or green cabbage
  • 1 small yellow onion cut in half and then sliced
  • 3 cloves garlic pressed or minced
  • ¼ cup olive oil divided
  • teaspoons black pepper divided
  • ½ cup fresh basil chopped
  • ¼ cup shredded vegan parmesan such as Violife, Follow Your Heart, or Good Planet
  • Juice of half a lemon
  • ¼ teaspoon salt

Instructions
 

  • Preheat the oven to 425 degrees. Toss the sliced cabbage and onion, garlic, 2 tablespoons of olive oil, and 1 teaspoon black pepper together. Spread on a baking sheet and roast for 10 - 15 minutes, until cabbage is slightly chard and onion has softened. Toss once or twice through cooking.
  • Meanwhile, bring a large pot of salted water to boil. Boil the pasta for 9 minutes.
  • When the pasta and veggies are done cooking, toss them together with the remaining olive oil and black pepper, basil, parmesan, lemon juice, and salt. Serve warm or at room temp
