Simple Lentil Soup
Simple, delicious, and easily customizable. Perfect for those days you just need something to come together quick and use up what's in the fridge. 232 calories per cup.
Ingredients
- 2 tablespoons vegan butter I use Earth Balance
- 2 medium carrots peeled and sliced
- ¾ cup sliced celery
- ½ medium yellow onion diced
- 2 cloves garlic pressed or minced
- 4 cups vegetable broth I use Better Than Bouillon Roasted Garlic Base
- 1 cup uncooked green or brown lentils
- ⅓ cup tomato sauce
- 2 bay leaves
- Black pepper to taste
Instructions
- Melt the butter in a medium-large pot over medium heat. Add the carrots, celery, and onion. Saute for 5 minutes. Add the garlic and saute for 1 more minute.
- Add the broth, lentils, tomato sauce, bay leaves, and black pepper to taste. Stir to combine.
- Bring to a boil. Simmer, covered, for 30 minutes. Remove the bay leaves. Serve garnished with dried parsley or dill.
