Sesame Ginger Granola Bars

These savory Asian-inspired granola bars are a great way to change up your snack game!

Ingredients
  

  • 3 tablespoons mirin sweet Asian cooking wine
  • 1 tablespoon ground flaxseed
  • cup old fashioned rolled oats
  • ½ cup almond flour
  • ½ cup hemp seeds
  • ½ cup raisins
  • ¼ cup pumpkin seeds
  • ¼ cup sesame seeds
  • ¼ cup roughly chopped roasted peanuts
  • 3 tablespoons chia seeds
  • 1 teaspoon onion powder
  • Pinch of salt
  • cup peanut butter
  • 3 tablespoons maple syrup
  • 1 tablespoon freshly grated ginger
  • 2 teaspoons sesame oil
  • 1 teaspoon soy sauce

Instructions
 

  • Preheat the oven to 350 F. Whisk the mirin and ground flaxseed together in a small bowl and set aside.
  • Combine all the dry ingredients (oats through salt) in a large bowl. Whisk the peanut butter, syrup, ginger, oil, and soy sauce in with the flaxseed/mirin mixture. Combine the wet ingredients with the dry ingredients and mix well. It may seem like there is not enough liquid at first. Keep mixing! I switch to my hands and smoosh everything together after stirring a few times.
  • Line an 8x11 baking dish with parchment paper. Press the mixture into the dish firmly. Smooth out the top and spread evenly to the edges as well as possible. Cut the bars - I use a dough scraper as it’s easier to press down directly rather than pulling a knife through the mixture, which can mis-shape the bars. I make a long cut across the long length of the dish, and then 4 or 5 cuts along the shorter width of the dish, resulting in about 10 bars.
  • Lift the parchment paper with the cut bars out of the baking dish, and carefully place on a baking sheet. This helps cook the bars more evenly. Place the baking sheet in the oven for 25 minutes. Remove from the oven and set bars and parchment paper on a cooling rack until cool. Store in the refrigerator.
