Savory Garlic and Dill Oats

A delicious savory take on a breakfast food staple. Fresh dill, garlic, and olive oil with lightly toasted rolled oats make this warm comforting (and simple!) dish perfect for any time of day.

Ingredients
  

  • 1 teaspoon extra virgin olive oil
  • 1 small clove of garlic pressed or minced
  • ½ cup old fashioned rolled oats *see note below recipe
  • 1 cup water
  • 2 tablespoons chopped fresh dill
  • 1 - 2 tablespoons pine nuts, sunflower seeds, or slivered almonds
  • 1 tablespoon vegan butter I use earth balance
  • ½ teaspoon ground flaxseed optional, *see note below recipe
  • Salt and pepper to taste

Instructions
 

  • Heat a small pot over medium heat. Add the olive oil and garlic. Sauté for 1 minute, watching to make sure garlic doesn’t burn.
  • Add the oats. Stir, and let them toast for 1 - 2 minutes. They should smell nice and toasty. Stir them around a bit to toast them evenly.
  • Add the rest of the ingredients. Stir, bring to a simmer, cover, reduce heat, and let simmer gently for a few minutes, until the oats are soft and the water has thickened/absorbed. I prefer to not cook my oats to a mushy porridge. Cook for longer if you prefer the oats to be broken down more.
  • Let cool slightly before serving. Taste, and adjust salt and pepper as desired. Optionally garnish with a drizzle of olive oil and more dill.

Notes

OATS: The different types of oats vary based on the degree of processing they undergo before being sold. You could easily use instant/minute oats instead of rolled oats. If using steel cut or whole oats, adjust water amount and cooking time accordingly.
FLAXSEED: Flaxseeds don't add substantial flavor to this recipe, but they have great nutritional properties! They need to be ground up in order for their nutrients to be beneficial to us. Once ground, they will lose their nutritional potency fairly quickly if not stored properly. I recommend buying whole flaxseeds and grinding them at home with a coffee or spice grinder (it takes about 10 seconds!) Store ground seeds in the freezer. Avoid buying unrefrigerated ground flaxseeds.
